I had this on my first trip to Florence and never forgot it.
To me it epitomizes the essence of good Italian food. Italians are able to take a few ingredients and make something so delicious, well, you find yourself writing about it when you get home. The freshness of this dish comes across every time. My daughter had a version with chicken and I bet fish could work as well.
Serve with a Chianti Classico and you will swear you've been transported to Tuscany
Boneless steak - I've used Sirloin and New York.
You don't want anything too thick.
Arugula washed and torn up
Thickly grated or thinly sliced Parmesan
Note: I've also used a mix of Parmesan and Pecorino on this and it is fantastic
Rub the steak with olive oil and balsamic vinegar and then add salt and pepper. The vinegar is optional, but I do recommend the oil.
Pour the wine and enjoy.
(This dish can also be prepared with raw beef sliced thin and marinated in olive oil and lemon juice. It's called Carpaccio.)
Inspired by the cheeses of Italy we've added some new cheeses to our stock at Fancifull. Good for the gift baskets and good for you!
We now have an aged Pecorino. This a semi-hard sheep's milk cheese that has been rubbed with extra virgin olive oil and aged naturally over four months. It has a wonderful smooth rich finish, with a bit of a bite. In Italy they serve it with honey and nuts as a dessert. It is incredible grated and added to anything, sliced with apples or pears, sliced for sandwiches, it is just good. I often use it instead of Parmesan.
Fontina: This is an Italian cheese from the Val d' Aosta region of Italy, north, near the Alps. This is a smooth, dense, and rich cheese. It tends to be mild but don't let that fool you into thinking it is bland. It has a delicate nuttiness and a bit of sharpness on the finish. It has a fat content of 45 percent so it melts beautifully and is consistently a favorite at our wine tastings at Fancifull
